Cheeseburger Casserole

Oh yes, you read that write. Helllllllo cheesy goodness! I made this dish tonight and it was a hit! Not exactly low-cal, but it is super easy to whip up and works great as leftovers.

One-Pot Cheeseburger Casserole

Ingredients

  • 1 tbsp. olive oil
  • 1/2 large yellow onion, diced
  • 1.5 pounds extra lean ground beef
  • 2 tsp. seasoning salt (or salt and pepper to taste)
  • 1 28oz. can of whole peeled tomatoes
  • 1 8oz. can of tomato sauce
  • 2 cups low-sodium chicken broth
  • 2 cups of water
  • 1/4 cup ketchup
  • 2 tsp. Dijon mustard
  • 1 pound rotini pasta
  • 2 cups shredded cheddar cheese
  • Fresh diced tomato
  • Green onion
  • Pickles
  • Shredded lettuce

Instructions

1. Add olive oil and sautee onion until softened over medium heat in a large pot

2. Increase heat to high and add ground beef. Season with 1 tsp. seasoning salt plus a pinch of pepper

3. When ground beef is fully brown, drain excess fat

4. Use kitchen scissors to chop-up whole tomatoes while still in the can

5. Add canned tomatoes, tomato sauce, chicken broth, water, ketchup, mustard, pasta and additional teaspoon of seasoning salt to the pot and bring mixture to a boil

6. Turn heat down, and let simmer for 15-20 mins., or until pasta is tender

7. Once pasta is cooked, remove from heat and stir in 1 cup of shredded cheddar cheese

8. Sprinkle remaining cheese on top and re-cover with lid until cheese is melted

9. Add your choice of additional cheeseburger toppings – I like diced tomatoes, green onions, diced pickles, and lettuce

This recipe makes 6 servings. I usually cut the recipe in half to feed 2-3.
