Pineapple Rice

I grew up on pineapple rice. It is a great memory of my childhood. And I always thought it was just a dish that most Mom’s made, until one of my friends came over and I served it for dinner. Apparently it isn’t a regular thing – and it should be!

If you are….single and on a budget. Or a busy Mom with a family to feed. Or a lazy/bad cook. Or just someone who loves pineapple and loves rice, then this dish is for you!

Erika’s Super Simple Pineapple Rice


1/2 cup brown rice

1 can pineapple tidbits (in their own juice)


Open the can of pineapple tidbits and drain every last drop of juice into a measuring cup. Keep the pineapple tidbits aside. Measure out the juice, and top up with water if necessary (you should follow the directions on the box to make rice, but you are just switching out most of the water for pineapple juice). It is usually 1 cup water for 1/2 cup rice. Boil the pineapple juice, then add your rice. Cook the rice according to the directions on the box. Once rice is almost done, add the pineapple tidbits. cook for 1-2 mins. more. Serve warm. This dish is also great as leftovers!
