Lettuce Wrap It Up

First of all, “Lettuce Wrap It Up”…get it? I seriously think I am just too witty for my own good sometimes!

Lettuce wraps are basically a normal wrap without the added calories and carbs of the wheat – hallelujah. Lettuce >Carbs, right? There are so many different variations out there if you look, but my favourites are usually ones I concocted with whatever was in my fridge at the time!

Here is one of my go-to’s:

Sweet Child in the City Chicken Salad Lettuce Wrap


6-8 pieces of large romaine lettuce or Boston lettuce

1 cooked chicken breast, shredded

Shredded carrots

1/2 apple, chopped

1 celery stalk, chopped

Handful of red grapes, halved

1 tbsp. of walnut pieces

2 tsp. honey

2 tsbp. almond butter


1. Mix everything except the lettuce in a bowl.

2. Wash and dry the large pieces of lettuce (I find Boston lettuce works best), and lay out on a plate.

3. Put spoonfuls of the mixture on the pieces of lettuce.

4. Wrap up and enjoy!

Makes enough for 1 person, 6-8 lettuce wraps.
