Cheers! My Fave Summer Cocktails

There is nothing like a cold beer on a hot summer day. Or a great cocktail!

Here are a few of my favourite drinks to sip in the sunshine this summer:

Pink Gin Fizz Drink (via


In a glass, pour 2 ounces orange juice over ice. Combine 1 and 1/4 ounces gin, 1 tbsp. simple syrup, and 4 ounces pink grapefruit juice; slowly pour over orange juice. Top with seltzer. Makes 1 drink.

Raspberry Limoncello Prosecco (via


In a large pitcher, whisk together 3 cups chilled prosecco and 1 cup chilled limoncello liqueur. Serve over 1 cup raspberries, garnished with 6 sprigs of fresh mint.

Strawberry Coconut Water Cocktail (via



  • 1 cup (250ml) of fresh coconut water
  • 1 cup (250 ml) strawberries hulled and sliced
  • 3 T of sugar syrup or agave nectar
  • 1 shot (or as much as you like) of white rum


  1. To make the sugar syrup, boil sugar and water together in a ratio of 1:3 sugar to water. Boil until it thickens to a runny syrup consistency.
  2. Add the coconut water, strawberries, sugar syrup and rum to a blender, and blend until desired consistency.
  3. Serve with loads of ice.

The Painkiller (also known as the Official cocktail of the British Virgin Islands)


In a cocktail shaker filled with ice, add 3 oz. Pusser’s rum, 4 oz. pineapple juice, 1 oz. cream of coconut, and 1 oz. orange juice. Stir. Pour into a cocktail glass and top with fresh grated nutmeg.

Peach Moon (via


Combine a Belgian white beer (I like to use Rickard’s White, Shocktop, or Kronenbourg Blanc) with 1 oz. peach schnapps and orange juice to taste.

Watermelon Breeze (via


Combine 3 cups chilled watermelon (cubed), 1 cup coconut water, a squeeze of fresh lime, a sprig of mint, and ice (if needed) in a blender. Blend until smooth. Makes two servings.

Sparkling Pineapple Lemonade (via


In a large pitcher, mix 1 large can lemonade and 1 quart of pineapple juice.  Stir together.  Then add 1/2 quart sparkling white grape juice.  If you want extra fizz, add extra grape juice.

Rhubarb Pink Lemonade (via


For the rhubarb purée: in a small saucepan over low heat, cook 1 cup roughly chopped rhubarb with 1 tbsp sugar, adding more to taste, until rhubarb has released its juices and is soft. Cool slightly, then transfer to a blender and puree. Refrigerate in an airtight glass container.


  • 1 1/2 oz gin
  • 1 oz simple syrup
  • 3/4 oz freshly squeezed lemon juice, plus a lemon wedge (for garnish)
  • 1/2 oz rhubarb purée
  • Bitters

In a shaker filled with ice, shake together gin, simple syrup, juice and purée. Strain into an old fashion glass filled with ice, top with bitters and garnish with lemon wedge.

The Frenchy Cocktail (via


In a chilled rocks glass filled with ice, add 1 and 1/2 oz. pear vodka and 3 oz. pineapple juice. Top with 1 oz. cranberry juice.

Moscato Strawberry Lemonade (via



The Paloma (via


  • ¼ cup tequila
  • ¼ cup club soda
  • ¼ cup fresh grapefruit juice
  • 1 tbsp fresh lime juice
  • 1 tsp sugar
  • Small plate with sugar
  • Grapefruit wedge
  1. Sprinkle sugar on a small plate, cut grapefruit in half, rubbing outer edge of cocktail glass on grapefruit to wet, rub rim of glass in sugar.
  2. In your cocktail glass combine grapefruit juice, lime juice, and sugar, mixing until sugar dissolves.
  3. Add tequila, club soda, and ice.
  4. Garnish with a wedge of grapefruit and enjoy!
