Power of Protein Pudding!

Healthy dessert? Protein pudding? You are totally thinking oxymoron right? Wrong!

A friend of mine recently told me about her after dinner delight, something she eats almost every night. Obviously I had to try it…right away. What can I say, it was delicious! The perfect healthy alternative when you are craving something a little sweet. Sorry I don’t have a picture!

Protein Pudding

1 scoop protein powder (I used Vega All-In-One Vanilla)

1 tsp. cacao powder (you can also use cocoa powder)

7 drops liquid Stevia (or two packets of Stevia)

1 tbsp. all-natural organic peanut butter

1/4 cup chocolate almond milk (unsweetened)

Put the protein powder, cacao powder, Stevia, and peanut butter in a bowl. Mix together while adding the milk slowly. Continue to stir until the ingredients become smooth and creamy. Put in the freezer for 20 minutes, then enjoy!

Makes 1 serving.

220 calories, 27.5g protein, 10g fat, 2g sugar, 7g carbs

You may be wondering why I used cacao powder instead of the more popular cocoa powder, and liquid stevia as opposed to powdered. Cacao is is a top source of antioxidants, and it contains an abundance of magnesium and iron. It is a healthy alternative to conventional over-processed cocoa. The brand I like is Navitas Naturals. The story behind the liquid stevia is that sugar in liquid form that it is less processed and thus does not turn into fat quite like powdered does due to it being in a more natural state.

I’ve also heard conflicting theories on eating a lot of protein close to bedtime. But, my theory is this is way better than any other crap you crave at night! 🙂
